RAW cookies

Okay, I am finally getting around to posting these  recipes and doing a nutritional analysis.  Basically, they have a lot of calories and fat, so probably shouldn’t be on the cleanse.  However, if a little something sweet will help keep you sane and on the detox, I say pop one for dessert like I do.  Just don’t keep popping!

I made 2 different kinds today.  The first is super fattening because it has 4 ingredients, so I don’t recommend you make them if you’re trying to lose weight (which we all are).   However, they are SO SO SO good.  Better than a real pb cookie, in my opinion.  And no crack (aka processed sugar) and only good for you fat.

Peanut Butter Coconut Cookies

These are about the diameter of a loonie...maybe a toonie (townie?)

Ingredients:

1/2 cup natural peanut butter

1/2 cup roasted UNSALTED peanuts

1/2 cup unsweetened currents

1/2 cup unsweetened flaked coconut

touch vanilla and salt (optional)

Throw everything in a food processor and let it rip!  You can stop it at your desired texture.  I left mine a bit “chunky,” but you can keep going until dough is a uniform colour.  Roll into 22 balls and flatten.  Each of the 22 cookies is 75 calories and 5.5 grams fat.

Better than Junior Mints Cookies

Seriously.  These little gems are amazing!  If you love chocolate and peppermint and chewy yumminess, then make these.  Now.  Seriously.  They are that good.  The cookies look big in these pictures, but they are quite small.  Not much bigger than a junior mint.

So mint-chocolatey and chewy!

Ingredients:

1/2 cup raw cashews, slightly toasted (so the flavour stays mild, but a little stronger than raw)

100 grams pitted dates (about 16-18)

1 Tablespoon cocoa powder (raw, if you can find it)

1/2 teaspoon vanilla

1/2 teaspoon pure peppermint extract

sprinkle of salt (the chocolate needs this to become even more delicious)

Throw everything in the food processor and hit play.  Blend until it comes together and starts to make a ball.  You want to get those cashews blended pretty finely.  When you like the texture, roll the dough into 16 little balls.  When you pat them down, they should be quarter sized.  Each of the 16 cookies has 43 calories and 2 grams fat.

    I made the cashew and date lara bars cookies on Monday night. My little processor attachment doesn’t really cut too well, but it was good enough. I made about 6 cookies about the size of a loonie, or toonie.I took one to work with me on Tuesday and ate one the night I made them. Mary and the kids ate the rest.
