Mom and Jo (especially), I see that you are more or less in this alone and don’t have much time to cook. For the rest of this week, please focus on the grain bowls with beans. Cook 2 cups of brown rice or quinoa, and you should be good for 4 days. 1 cup of beans a day is enough, so a can will last 2 days. Saute up an assortment of veggies, throw in the beans. Toss some mixed salad leaves in dressing. Put everything in the bowl (divide into thirds). You’ll be eating in 15 minutes start to finish. When you have time, make a soup to add to supper or to lunch along with leftovers.
My kids LOVE rice and beans! They also love my pureed soup with crackers. These are kids who hate all things vegetable. This is a great way to introduce our kids to this lifestyle.
Regarding relationships, that is tougher. Jo, I’m sorry you don’t have the support of your wife on this new lifestyle. But, this is something you need to do for yourself, and your family, regardless of pressures at home. For now, it is stressful because it is new and challenging. Eventually, this new way of eating/cooking will become second nature and just be the status quo for you within your household. If you stick with this eating-style, everyone will have to get used to it eventually. You CAN do it! Don’t quit.
