No-Fu Loaf

I have a backlog of recipes that I haven’t yet posted.  My brain is beginning to strategize the new cooking website I plan on launching, so I am visiting my family’s site less often.  I am still making yummy new mostly vegan suppers, but also remaking some of the old ones.  I must say it is handy having my recipes all in one place.

Here is a delicious lentil loaf I made a few days ago.  Years ago, I bought my first vegan cookbooks by Dreena Burton.  Her recipes are excellent and very family friendly. This recipe that I got from FatFreeVegan‘s blog is from Dreena’s new book.  The loaf was so good, that I may have to buy her book.  My 2 and 4 year olds LOVED it!

No-Fu Loaf

  • 1/2 cup brown (green) lentils
  • 1 cup vegetable stock
  • 1/3 cup water
  • 1 dried bay leaf
  • 3/4 cup steel cut oats
  • 4 cups water
  • 1 cup water, boiled
  • 1/4 cup  ketchup
  • 1 cup rolled oats
  • 3 tablespoons Bragg’s soy sauce
  • 2 tablespoons nutritional yeast
  • 2 tablespoons chia seeds or flax meal
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons tahini
  • 2 teaspoons blackstrap molasses
  • 1/4 teaspoon dried thyme
  • 1/4 – 1/2 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/8 teaspoon ground fennel (optional)
  • Freshly ground black pepper to taste
Topping
4 tablesoons ketchup
1 teaspoon worcestershire
Instructions:
Take out 2 pots.  In one, bring the lentils, stock, water, and bay leaf to boil then simmer on low heat for 25-30 minutes until lentils are tender.  Don’t overcook!  In the other pot, bring steal cut oats and water to boil, reduce to simmer for 20-30 minutes until softened and chewy.  Drain water from oats and add to lentils along with all the over ingredients.  Stir well.
Preheat oven to 375F.  Line a bread pan with parchment paper.  Dump lentil mixture into pan, and smooth the top.  Combine ingredients for topping and spread onto the loaf.  Cover with foil.  Bake for 25 minutes, remove foil then bake for another 8-10 minutes.  Remove from oven and let sit for 15 minutes before cutting and serving.  Serve with mushroom sauce if desired.

My kids loved this. Ketchup mandatory!
